生酮生活
呢排飲食越嚟越生酮 (利申非原教旨主義者,其實我仲係會食米飯同公仔麵),主要係減咗蛋白質多咗油脂。唔知係咪因為咁,餓感越嚟越少,然後睡眠時間亦越嚟越奇怪。有次直頭失眠 36小時,隔咗一日冇瞓覺。呢個問題真係要搞搞佢 :-/
至於食啲乜呢? 近排玩各式各樣嘅油。種籽油就當然可免則免,就算生酮友都唔會叫你飲大豆油。有言種籽油嘅 omega-6 linoic acid 唔多好,又或者話個生產過程會引入有害物質,anyway 世界上冇人會同你講食多啲種籽油,所以都係用返啲傳統安全嘢好啲:
- 初榨橄欖油 - 地中海民族至愛,食咗幾千年,穩陣
- 豬油 - 中國傳統食用油
- 牛油/奶油 - 歐洲傳統食用油,法國人話你知食唔死你
- 鴨油 - 好味 :3
早幾日玩奶油 (whipping cream),基本上整湯超易。
- 將食材 puree
- 加熱
- 落奶油攪渾
雖然我唔食磨菇,但用上面方法整磨菇湯效果又唔錯。仲試咗南瓜湯(超市見到減價南瓜蓉)。
然後最近幾日玩鴨油玩得好開心,想記低兩個食譜:
Scrambled Egg
- Prepare whipping cream, duck fat, large egg. Cream:DuckFat:Egg in 1:1:2 portions
- Slightly warm the duck fat in container (a large cup will work), add cream, stir till fat is emulsified within the cream
- Add egg, stir until everything mixes together into a thick paste
- Add pinch of salt/pepper seasoning to taste
- Add pinch of mustard (optional)
- Heat a bit of extra duct fat in pan, and stir fry the mixture until it is just cooked. Do not overcook.
鴨油炒耶菜
- 大量鴨油,少量豬肉碎,酌量鹽、豉油、胡椒粉,落鑊爆香
- 加入切成2~3cm方塊嘅耶菜,炒炒炒抛抛抛(鑊)
