生酮生活

呢排飲食越嚟越生酮 (利申非原教旨主義者,其實我仲係會食米飯同公仔麵),主要係減咗蛋白質多咗油脂。唔知係咪因為咁,餓感越嚟越少,然後睡眠時間亦越嚟越奇怪。有次直頭失眠 36小時,隔咗一日冇瞓覺。呢個問題真係要搞搞佢 :-/

至於食啲乜呢? 近排玩各式各樣嘅油。種籽油就當然可免則免,就算生酮友都唔會叫你飲大豆油。有言種籽油嘅 omega-6 linoic acid 唔多好,又或者話個生產過程會引入有害物質,anyway 世界上冇人會同你講食多啲種籽油,所以都係用返啲傳統安全嘢好啲:

  1. 初榨橄欖油 - 地中海民族至愛,食咗幾千年,穩陣
  2. 豬油 - 中國傳統食用油
  3. 牛油/奶油 - 歐洲傳統食用油,法國人話你知食唔死你
  4. 鴨油 - 好味 :3

早幾日玩奶油 (whipping cream),基本上整湯超易。

  1. 將食材 puree
  2. 加熱
  3. 落奶油攪渾

雖然我唔食磨菇,但用上面方法整磨菇湯效果又唔錯。仲試咗南瓜湯(超市見到減價南瓜蓉)。

然後最近幾日玩鴨油玩得好開心,想記低兩個食譜:

Scrambled Egg

  1. Prepare whipping cream, duck fat, large egg. Cream:DuckFat:Egg in 1:1:2 portions
  2. Slightly warm the duck fat in container (a large cup will work), add cream, stir till fat is emulsified within the cream
  3. Add egg, stir until everything mixes together into a thick paste
  4. Add pinch of salt/pepper seasoning to taste
  5. Add pinch of mustard (optional)
  6. Heat a bit of extra duct fat in pan, and stir fry the mixture until it is just cooked. Do not overcook.

鴨油炒耶菜

  1. 大量鴨油,少量豬肉碎,酌量鹽、豉油、胡椒粉,落鑊爆香
  2. 加入切成2~3cm方塊嘅耶菜,炒炒炒抛抛抛(鑊)
